Suzanne and Jimmy - Owners & Chocolate Makers

We live and work within the traditional lands of the Dena’ina Peoples, known today as Anchorage, and are grateful for their ancestral and current stewardship of these lands.

We first got into making chocolate while traveling through Central America, where we took a class and learned to make chocolate from scratch. We were instantly hooked. The first thing we did when we returned to the U.S. was purchase our first stone grinder for making chocolate. Suzanne has a number of food allergies that make it difficult to find chocolate she can eat; at first, we started making chocolate in part because of how fun it was and in part because it allowed us to make chocolate that was free of all the additives common with store-bought chocolate. But along the way, we discovered so much more – about not only the stories behind the different cacao farmers and cooperatives that are growing incredible cacao and the amazing flavors of that cacao, but also the efforts to better compensate and reward farmers who grow that cacao and to address the many human rights issues with the cacao industry. We are excited to be working in our small way toward addressing these issues.

We also, of course, love the incredible flavors of chocolate made from scratch with that cacao. We roast our cacao in small batches and dial in the flavors we want to highlight in each bean, and then stone grind it for multiple days to further develop the flavors. We also love food in general, and have a passion for figuring out ways to combine our love of chocolate with different flavors and taste experiences for our flavored bars.
